Of all of the food related days that are celebrated through the year, Shrove Tuesday is a firm favourite. Otherwise known as Pancake Day, Shrove Tuesday lands on Tuesday, February 25th this year, and marks the start of Lent for the following 40 days. Celebrated every year, it’s the perfect day to really pig out on stacks of delicious pancakes before the month of abstinence from goodies begins.

To celebrate, we’re sharing our favourite, easiest pancake recipe so you can whip up a batch at home!

100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
lemon wedges or lemon juice (optional)
caster sugar (optional)

  1. Add your plain flour, eggs, milk, and a pinch of salt into a bowl or large jug, then mix or whisk ingredients into a smooth batter.
  2. If you’re having pancakes as an after dinner dessert, it’s a great idea to make the mix up before your main meal so it can rest and thicken for a while, but this mix is easily delicious if you start cooking right away.
  3. Get your favourite frying pan (or crêpe pan if you’re fancy), add a little of your chosen oil, and heat over a medium heat until warm.
  4. When your pan is nice and hot, pour a little of the mix and cook for about 60 seconds on each side. One way to gauge cooking time is to watch for bubbles! When both sides are deliciously brown, it’s ready to eat!
  5. Our favourite way to eat pancakes is the classic and simple lemon and sugar topping, but if you’re looking for something more luxurious, Nutella spread is another firm favourite.
  6. Dig in!
